I woke up today wondering what I would eat.
I knew I had canned salmon at home sitting in the pantry for the past 2 months, avocados, that were all ripe, 1pepper, 2 cucumbers, lemon and my favorite pepper sauce, Ayor Caliente. I got some fresh herbs from my garden and started cooking.
I was too lazy to spend time chopping everything, so I decided to make avocado pockets instead.
It is a yummy protein packed and refreshing dish.. Follow the recipe below:
First, slice open 3 avocados and remove the pits. Set aside.
Then, mix together the rest of the ingredients in a medium-size bowl.
Fill each avocado half with 1/6 of the salmon salad. Top with chopped bell peppers and a squeeze of lemon.
In this recipe, I use Kirkland's Canned Salmon (Kirkland Signature Wild Alaskan Pink Salmon)
3 avocados, halved
1 tbsp green onion, minced
2 tbsp parsley, minced
1 tbsp minced garlic
2 tbsp lemon juice
2 tbsp olive oil
1 tsp apple cider vinegar
1/2 teaspoon of salt to taste
1 teaspoon of Ayor Pocket Peppers
