About the Event

Motherland Cooking Xperience - Valentine's Edition   “A culinary, musical and literary journey to Africa.”   Learn how to prepare African dish, while enjoying live African music, poetry, and storytelling.   

Our cooking class will highlight delicious African dishes: - Suya - Eru - coconut puffpuff. 

Come away with us on this exciting journey to the motherland.

Motherland Cooking Xperience  List of ingredients

Suya Recipe

Ingredients:

  • 250 grams flank, sirloin, or topside
  • 1/2 cup roasted unsalted peanuts, skins removed - ground into a rough powder or penut powder
  • 1/4 to 1/2 cups vegetable oil, plus more for grilling
  • 1 pinch kosher salt
  • 1 to 2 tablespoons fresh lemon or lime juice
  • 1 teaspoon chili powder or cayenne pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon sweet paprika
  • Thinly sliced red onions, tomatoes, and cilantro leaves, for garnishing

Eru Recipe

Ingredients:

  • 2 pounds meat (beef, tripe, cow skin, smoked turkey) - You can skip the tripe or cowskin is you like ( if you are a vegan or veggetarian, skip the meats all together.)
  • 1 1/2 pounds smoked dried fish
  • ¼ chopped onion
  • 2-4 cups palm oil , you can use half corn oil and half palm oil
  • 1/2 cup Ground crayfish
  • 5-6 cups dried  or fresh chopped Ukazi/ eru leaves
  • 2 pounds of frozen spinach
  • 2 Maggi/Bouillon
  • Salt and pepper
  • Scotch bonnet pepper optional

Garri:

3 cups of garri

3 cups of boiling water

Coconut Puffpuff Recipe

Ingredients:

  • 2 cups of warm water
  • 2 1/4 teaspoon (7grams) active dry yeast (1 packet)
  • 4 cups (440grams) flour
  • 1/2- 3/4 cup (100-150grams) sugar
  • 1/2 Tbsp (8-9grams ) salt
  • 1.5 liters of canola or vegetable Oil for deep frying
  • 2 cans of warmed unsweetened coconut milk
